Trending Now in Foodie Circles: Filipino Cuisine

The next food craze might just be Filipino-related if Andrew Zimmern has anything to say about it.
A recent video with the celebrity chef and “Bizarre Foods” host broke down his thoughts on what the next food trend in America is shaping up to be. America has been obsessed with Asian cuisines for decades, Zimmern says, and now it’s looking ready for Filipino food to take the spotlight.

This isn’t a new opinion of Zimmern’s either; he attracted attention five years ago when he named it the next big thing. Filipino food is already catching fire in plenty of food circles, both online and in the real world. Canada isn’t exempt to this either; the Globe and Mail devoted plenty of column space to it last year. Edmonton is home to some great Filipino food spots, with a new one – Jollibee, the “McDonald’s of the Philippines” – slated to open up next year a stone’s throw from popular establishment Max’s Restaurant, which can only spell great things for fans of Filipino cuisine.

Zimmern credits the explosion of interest to a diverse set of global influences and techniques that make the cuisine great for anyone looking to expand their taste buds.

“Their use of acidity, the quality of their food has the best of Asian cuisine and the best of sort of what happens when really good Asian food … island Asian food brushes up against Spanish culture,” he said. “The Spanish had colonized the Philippines for almost 500 years at one point. So the influences are heartfelt.”
